This is a very classic bruschetta recipe that uses fresh ingredients like basil, garlic and cherry tomatoes. An easy recipe to follow with delicious results. Perfect to make as a party appetizer or a stand-alone meal if you so choose. Enjoy!

Prep Time: 10 minutes | Cook Time: 20 minutes | Total Time: 30 minutes | Servings: 6

Ingredients

  • 1 ciabatta loaf of bread (or a French baguette)
  • 6 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 cup of fresh basil, chopped finely
  • 1 cup of cherry tomatoes, diced
  • Salt and pepper to taste
  • 2 tbsp balsamic vinegar
  • 1 cup of shredded mozzarella cheese, optional

Cooking Instructions

  1. Pre-heat oven to 350°C degree
  2. Slice loaf of bread down the centre vertically, cutting the loaf into two halves
  3. Cut each half into 3 even pieces (total pieces should be 6)
  4. Pour olive oil onto a plate
  5. Take each piece of bread and gently dip the top part into the olive oil to cover the entire surface
  6. In a mixing bowl, toss together cherry tomatoes, basil, garlic, salt and pepper
  7. Lay each piece of bread on a baking sheet and scoop equal amounts of bruschetta mix on top
  8. Drizzle balsamic vinegar on top of each piece
  9. Sprinkle shredded cheese on top (optional)
  10. Bake for 15-20 minutes and serve immediately.

Note(s): You can modify the amount of bread or bruschetta mix based on the serving size you’d like to make. This recipe yields 6 servings.
